Whether you’re picking up a beef bundle to stock your freezer, attending our Farm Camp, or stopping by for a visit, we want you to feel connected to the food on your plate and the farmers who make it possible.

Greg Elsing is proud to carry on his family’s fifth-generation farming tradition, but he isn’t doing it alone. His two children and their cousin now work full-time on the farm as the sixth generation, ensuring that Elsing Farms and Prairie Raised Beef continues to thrive for years to come.

Avery and Emily, who have been together for several years and are now engaged to be married, represent the next chapter of our farm’s story. Emily, a graduate of the University of Wisconsin-Madison, shares our passion for sustainable agriculture and community engagement. She plays a vital role on the farm—helping sell our beef and creating enriching on-farm experiences that bring people closer to agriculture.

A Legacy Rooted In The Land

Our family’s roots on the Sauk Prairie run deep. Prairie Raised Beef is more than just a business—it’s the continuation of a legacy that began in 1854, when William Elsing (Greg’s great-great-grandfather) received a pardon from the King of Prussia for his outstanding civic contributions. A year later, he made history by purchasing eight acres from Jonah Bell—the earliest recorded land purchase at the Sauk County Courthouse.

In 1865, after serving in the Civil War, Greg’s great-grandfather, Henry Elsing, was granted 40 acres of land from the federal government—marking the true beginning of our family’s agricultural legacy.

Fast forward to 1955, when Greg’s grandfather, Walter Elsing, was recognized for achieving the highest milk production of grade cattle in Sauk County. He was also the first producer west of the Wisconsin River to go on grade A milk, a testament to our family’s commitment to quality and innovation.

Greg’s parents, Henry & Diane Elsing, continued the family tradition until 1994, and today, Greg proudly carries on as the 5th generation. With his children and their cousin now full-time on the farm, and Avery & Emily embracing the future, Prairie Raised Beef is thriving—bridging tradition and modern agriculture to bring high-quality, locally raised beef to our community.
